Fudge Mint Poke Cake

Fudge Mint Poke Cake
Rich, moist chocolate cake covered with decadent hot fudge sauce, topped with a light mint whipped cream and crushed Marie's Mint Oreos. A festive treat to serve for St. Patrick's Day!

Ingredients (cake):
2 C. Flour
2 C. Sugar
1/2 tsp. Salt
1 tsp. Baking Powder
2 tsp. Baking Soda
2/3 C. Cocoa Powder
2/3 C. Vegetable Oil
1 C. Milk
2 Eggs
1 tsp. Vanilla
1 C. Hot Coffee (already brewed)

Hot Fudge:
1 1/2 Squares Unsweetened Baker's Chocolate
1 Can Sweetened Condensed Milk
1/4 C. Water
1 tsp. Vanilla
1/2 tsp. Peppermint Oil


Whipped Cream:
1 C. Whipping Cream
1/3 C. Sugar
1/4 tsp. Peppermint Oil
3-4 Drops Green Food Coloring
6 Marie's Mint Oreos, chopped

Directions:
For the cake, sift dry ingredients into a bowl. Add oil, milk, eggs, and vanilla and beat for two minutes at medium high speed. Blend in the coffee (batter will be thin). Pour into a 9 X 13 pan and bake at 350 degrees for 30 to 35 minutes. When done, poke holes in the top with a straw or end of a spoon.

For the hot fudge sauce, stir milk, water, and chocolate together over medium low heat until boiling, stirring constantly. Turn down heat and simmer until slightly thickened. Add vanilla and peppermint oil. Pour over cake. Let cake cool completely before adding whipped cream.

For the whipped cream, beat whipping cream in a chilled bowl until stiff. Gradually add sugar, peppermint oil, and green food coloring just until blended. Spread over cooled cake. Chop Marie's Mint Oreos and sprinkle over cake. Store cake in refrigerator. Enjoy!!!

Ingredients:
1 Box Cake Mix & Ingredients on Box
1 Jar Hot Fudge Sauce
1 Tub of Cool Whip
Peppermint Oil
Green Food Coloring
6 Marie's Mint Oreos, chopped


Directions:
Prepare cake according to box instructions.
When finished baking, poke holes in the top with a straw or end of a spoon.
Mix 1/2 tsp. peppermint oil into jar of hot fudge sauce and pour over cake.
Mix 3-4 drops green food coloring and 1/4 tsp. peppermint oil into tub of whipped topping.
Let cake cool completely, then add the whipped topping and chopped Marie's Mint Oreos.
Keep refrigerated & enjoy!
