Try your hand at making these melt-in-your mouth snickerdoodles filled with a Marie's Irish Potato
(Butter Cream rolled in cinnamon) and dusted with cinnamon and sugar. Simply divine!
1 cup butter, softened
1 1/4 cup sugar
1 1/2 tsp. vanilla
3 cups flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 lb. Marie's Irish Potatos
1/4 cup sugar
1 1/2 tsp cinnamon
-Preheat oven to 350 degrees.
-In a large bowl, cream together butter and sugar until fluffy.
-Add egg and vanilla and mix until combined.
-In a separate smaller bowl, stir together the flour, baking powder, and salt.
-Slowly add the dry ingredients to the wet ingredients and mix until combined.
**Texture is important; if the mixture is crumbly add 1 tsp. of water at a time until desired consistency is reached. If too wet, add 1 Tablespoon of flour at a time and mix until combined and desired consistency is reached.
-Combine 1/4 cup sugar and 1 1/2 tsp cinnamon in a small bowl.
-Scoop about 3 Tablespoons of dough and flatten in your hand or on a clean work surface.
-Place one Irish Potato in the middle of the dough and shape the dough into a ball around the candy to encase it.
-Roll the dough in the cinnamon-sugar mixture and place 2" apart on a greased cookie sheet.
-Bake for 13-15 minutes, until just set.
