Truffle Cupcakes
These elegant cupcakes are a perfect treat you can bake to make your mom feel special this Mother's Day. They feature a fluffy white cupcake with a rich Dessert Truffle center and a light whipped cream frosting.

Ingredients:

1 Box White Cake Mix & Ingredients on Box
2 C. Heavy Whipping Cream
3/4 C. Powdered Sugar
1 tsp. Vanilla
1 T. Dry Milk Powder (opt. It helps the whipped cream stay set)
Pink Food Coloring
24 Dessert Truffles

Directions:

-Make cupcake batter according to instructions on the box.
-Fill cupcake liners half full of batter and place one Dessert Truffle in each.
-Bake according to directions on the box.
-Remove from the oven and let cool.
-Meanwhile, chill a bowl and mixer beaters to make the whipped cream.
-Pour the whipping cream, powdered sugar, vanilla, milk powder, and food coloring into the chilled bowl and beat until soft peaks form.
-Top the cooled cupcakes with the whipped cream.
-Best when served soon after making and the truffle is still slightly warm. Store leftovers (if there are any!) in the refrigerator and let warm to room temperature before enjoying again (so the truffle center isn't too hard).
