Chocolate Orange Biscotti

Try your hand at baking this twist on classic biscotti! A crunchy orange flavored cookie bursting with chunks of chocolate covered orange peel and drizzled with dark chocolate, perfect for dipping in your coffee or enjoying by itself.

2 1/2 c. Flour
2 tsp. Baking Powder
1/4 tsp. Salt
1/2 c. Butter, softened
1 c. Sugar
1 TBSP. Orange Zest
3 TBSP. Orange Juice
2 Eggs
1/2 tsp. Vanilla
1/4 lb. Marie's Candies Chocolate Covered Orange Peel, finely diced
1 Egg White
6 oz. Marie's Candies Dark Chocolate Baking Chunks

-Preheat oven to 325 degrees
-In a small bowl, whisk together flour, baking powder, and salt; set aside.
-In a large bowl, beat together butter, sugar, and orange zest until fluffy. Add in orange juice, whole eggs, and vanilla and beat until combined. Add flour mixture and beat until combined. Stir in the Orange Peel until evenly distributed.
-Divide the dough in half. Knead each half 4-5 times on a lightly floured surface. Roll each half into a rectangle, about 12"x6". Move the dough rectangles to a parchment paper-lined baking sheet.
-Whisk together the egg white and 1 tsp water. Brush the egg white wash over the biscotti.
-Bake for 30-35 minutes, until lightly golden and just firm to the touch. Leave on the pan and allow to cool 10-15 minutes.
-Move biscotti to a large cutting board and cut diagonally into desired sized slices (traditionally 1/2" to 3/4" wide).
-Move the biscotti slices back to the baking sheet and stand them on their new sides. Bake at 300 degrees for another 35 minutes, or until dry and browned.
-After the biscotti have cooled, melt the Dark Chocolate Baking Chunks in a small dish in 30 second intervals. Stir after each session until chocolate is smooth and all melted. Drizzle the biscotti with the chocolate and refrigerate until set.
