Maple Bacon Pancake Muffins

Add this great new recipe to your repertoire of holiday baking! These muffins have a maple-infused pancake flavor with salty sweet crunches of Chocolate Covered Bacon pieces. You can whip up these muffins ahead of time and freeze them so you have plenty on hand to serve company for the holidays.

1 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 TBSP sugar
2/3 cup buttermilk
1 egg
2 TBSP pure maple syrup
1/2 tsp vanilla
1/2 tsp maple extract (optional)
2 TBSP butter, melted
1/4 lb. bag Marie's Chocolate Covered Bacon, diced

-Preheat oven to 350 degrees.
-Stir together the flour, baking powder, baking soda, salt, and sugar in a medium sized bowl.
-In another bowl, stir together the buttermilk, egg, maple syrup, extract, and melted butter until just combined.
-Add the wet ingredients to the dry and stir until just combined.
-Add most of the diced Chocolate Covered Bacon (reserving some for topping) and stir until evenly distributed.
-Divide between 9 greased muffin cups and sprinkle with the reserved chocolate covered bacon.
-Bake for 8-10 minutes or until a toothpick inserted in the middle comes out clean.
-Serve warm with maple syrup for dipping. Enjoy!
