Mint Meltaway Brownies

3/4 c. cocoa powder
1/2 tsp. baking soda
1/3 c. + 1/3 c. oil
1/2 c. boiling water
2 c. white sugar
2 eggs
1 1/3 c. flour
1 tsp. vanilla
1/4 tsp. salt
2 c. chopped Marie's Candies Mint Meltaways

Preheat oven to 350 degrees. In a medium size mixing bowl, stir together cocoa powder and baking soda. Add 1/3 c. oil and the boiling water. Mix well until thickened. Stir in sugar, eggs, and the other 1/3 c. of oil. Add flour, vanilla, and salt and stir until just combined. Stir in the chopped Mint Meltaways. Pour batter into a greased 9 x 13 pan and bake 35-40 minutes. If desired, place more Mint Meltaways on top of brownies while still warm and spread with a spatula to make a creamy and delicious chocolate mint icing.
