No-Bake Shamrock Shake Pie

Ingredients:
For the crust:
- 12 graham crackers; crushed (or one ready-made 9 inch pie crust)
- 2 tbsp brown sugar
- 1/2 cup butter; melted
For the filling:
- 2 1/2 cups cold milk
- 2 tsp mint extract
- 1/4 tsp green food coloring; optional
- 2 - 3.4 oz. packages instant vanilla pudding mix
- 8 oz. container whipped topping; thawed
For garnish:
- whipped cream
- maraschino cherries
- Marie's Mint Meltaways
Instructions:
- Make the crust: In a medium bowl, mix crushed graham crackers and brown sugar. Add the melted butter and stir until the mixture looks like wet sand. Press the crust mixture into an 9-inch pie dish evenly and firmly. Place the crust in the freezer for 10-15 minutes to set.
- Prepare the filling: In a large bowl, whisk together cold milk, mint extract and green food coloring. Add instant vanilla pudding mixes and whisk for two minutes until thick and smooth. Cover and chill for 5-10 minutes to allow pudding to set.
- Assemble the pie: Stir the pudding mixture again to ensure a smooth texture. Gently fold in the whipped topping until well combined. Pour the filling into the chilled pie crust and spread evenly.
- Chill and serve. Cover and refrigerate for 6-7 hours (or overnight) for best results.
- Garnish with whipped cream, maraschino cherries, festive shamrock sprinkles or Marie's Mint Meltaways. Slice and enjoy!
