Truffle Stuffed Cupcakes

Just in time for Valentine's Day, this recipe will make any chocolate-lover swoon. A classic chocolate cupcake is made deeply decadent with a Dessert Truffle baked inside. Filled with a smooth hot-fudge-like filling and covered in rich chocolate, the Dessert Truffle is a scrumptious candy by itself, but combined with a cupcake, how can you go wrong!?

With 14 different flavors of Dessert Truffles to choose from, this recipe can be customized by filling the cupcake with whichever flavor you like, or by making an assortment. You can add flavoring to the icing to correspond with the flavored Truffle inside for even more yum!

1 box of chocolate cake mix and listed ingredients
12 Dessert Truffles (Dark Raspberry and White Amaretto pictured)
1 can white frosting
Red food coloring
Flavoring (optional)
Sprinkles (optional)

-Prepare two 12-spot cupcake pans by placing a cupcake liner in each spot.
-Mix up cupcake batter as directed on the box.
-Cut each Truffle in half.
-Fill each cupcake liner half full with batter and place a Truffle piece in the center.
-Bake according to the instructions on the box. (The truffle should be mostly concealed inside of the cupcake once baked. Frosting will cover any little bit that may be showing.)
-For the frosting, mix a few drops of red food coloring into the white frosting to create the shade of pink you would like. If desired, add 1 to 2 teaspoons of flavoring to correspond with the flavor of Truffle inside (raspberry flavoring for Raspberry Truffles, amaretto flavoring for Amaretto Truffles, etc.)
-Let the cupcakes cool and then frost. Tip: An easy trick is to scoop the frosting into a ziptop plastic baggie and cut a small hole in one corner of the bag to pipe the frosting out nicely.
-Decorate with sprinkles, if desired.
