Butterfinger Whoopie Pies


Ingredients:

For the Cookies:

  • 1 box of white cake mix
  • 8 TBSP butter, melted
  • 1 egg
  • 1 cup crushed Marie's Candies Peanut Butter Krisp (similar to Butterfinger)

For the Butter Cream:

  • 8 TBSP butter, room temperature
  • 1/4 cup shortening
  • 1/2 cup peanut butter
  • 1 TBSP honey
  • 1/2 tsp. vanilla
  • 3 TBSP water
  • 3 cups powdered sugar
  • 3/4 cup crushed Marie's Candies Peanut Butter Krisp

Instructions:

  1. Preheat oven to 350 degrees F.
  2. Beat the cake mix, butter, egg and Peanut Butter Krisps until a dough forms.
  3. Form into 48 - 1 inch balls and place on a nonstick baking sheet. Bake for 9 minutes.
  4. Let the cookies cool on baking sheet for 2 minutes, then remove to your wax paper lined counter to cool completely.
  5. Beat the butter, shortening, and peanut butter until light and fluffy.
  6. Add in honey, vanilla, and water and beat again.
  7. Slowly add powdered sugar until all is incorporated. Stir in the crushed Peanut Butter Krisps.
  8. Spread the frosting on one cookie and place another cookie on top.
