Lemon Crumb Bars


Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1 1/4 cups old-fashioned oats
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 cup packed light brown sugar
  • 3/4 cup unsalted butter, melted
  • 1 tsp. vanilla extract
  • 1 14 oz. can sweetened condensed milk
  • 2 TBSP finely grated lemon zest
  • 1/2 cup fresh lemon juice
  • 2 large egg yolks

Instructions:

  1. Preheat oven to 350 degrees F. and grease an 8x8 inch pan with baking spray.
  2. In a large bowl, combine the flour, oats, salt and baking soda.
  3. Stir in the granulated sugar and brown sugar
  4. Mix in the melted butter and vanilla, then add them to the dry ingredients. Stir until well combined.
  5. Press half pf the mixture firmly into the bottom of the prepare pan.
  6. Bake for 15 minutes
  7. While the crust is baking, whisk together the condensed milk, lemon zest, lemon juice and egg yolks.
  8. Once the crust is done, pour the lemon filling over it. Sprinkle the remaining crumble mixture evenly over the top.
  9. Bake for an additional 20-22 minutes, until lightly golden
  10. Allow bars to cool completely, then refrigerate until firm.
